Let’s Make Reuben Crescent Bake (Comfort Food, Upgraded)
I love a recipe that feels both old-school and new — and this one hits all the right notes. Think buttery crescent rolls, tangy sauerkraut, savory corned beef (we’ll talk swaps!), and melty Swiss cheese… all baked into one golden, bubbly dish that’s perfect for dinner or a crowd.
And no, you won’t miss the rye bread. Promise.

What You’ll Need (With Notes from My Kitchen)
Here’s everything you’ll want to gather before getting started — plus a few of my fave substitutions and tips:
- 2 cans refrigerated crescent roll dough – I use the classic Pillsbury kind, but any brand works! Look for “original” or “butter flake” for best flavor.
- 1 ½ cups shredded cooked beef – Traditional Reubens use corned beef, but I often use my Easy Shredded Roast Beef when I have leftovers!
- 1 cup sauerkraut, well-drained – I squeeze it in a paper towel to get all the liquid out. Too much moisture can make the bake soggy.
- 1 ½ cups shredded Swiss cheese – Or go half Swiss, half mozzarella if you want a stretchier pull.
